Just strike out the parts you don't agree with if that's how you feel. Is there a reason why one should quit instead of negotiating the contract while also letting them know you are offended by their initial offer?

Of course, if my current employer pushed something like that on me, I would be starting to look around. If anything, quitting is likely worse than being let go because you likely have less of a claim with regards to unemployment a lawyer would need to specify the actual details. We have agreed on the changes by me emailing scans of the contract with lines through the contract, strike-outs.

I got back all the changes I requested in a document that has my strikeouts intact using the strike-out font. I am thinking that I can't really sign a contract full of strike-outs.

And of course the solution is to ask for a copy with no strike-outs on it. But what if you sign the contract and it goes to court for some reason? Will the court go with the intent of removing the text?

Kind of curious. IANAL and don't deal with contracts but I believe that if it is initialed by both parties it would be fine. The reason for the initialing is so that later one party can't come back and say it was struck out after signing. If it bothers you you could always ask for a fresh copy with the changes made in. Both parties need to initial the strikeouts, at least that how my lawyer has handled in the past.
